CALUS 2024 and 2025: two years of our olive oil in Val d’Orcia

To get to know an olive oil, start with a little on a slice of bread. Take your time with the aromas, the bitterness and the gentle peppery note at the end. With CALUS, we invite you into the story of our olive groves in Val d’Orcia, looking back at two years: 2024 and 2025.

Four varieties from our olive groves

Moraiolo, Frantoio, Leccino and Pendolino are the four varieties behind CALUS. We grow them organically, and in 2024 and 2025 they became our cold-extracted extra virgin olive oil. That work finds its place at the table, where the oil complements a dish while keeping its own character.

It is the same care we bring to our farming: knowing what we grow and sharing it simply with our guests. If you would like to learn more, our organic farming page tells that story.

How we farm at Terre di Giorgio

2024: delicate aromas and green notes

We remember CALUS 2024 for its delicate, harmonious aroma, with fresh, green notes. On the palate, gentle pepperiness accompanied hints of olive leaf and artichoke stalk, with a slightly bitter finish.

Cooked and raw vegetables, pulses and fish were among the pairings we suggested for that year: dishes that gave the oil’s fresh character room to shine.

2025: green fruit and an almond finish

CALUS 2025 was green with golden highlights. Its aroma recalled unripe fruit and wet olive leaves; on the palate, bitter and floral notes met a gentle pepperiness, leaving a hint of almond on the finish.

For this year, our kitchen suggestions centred on pulse soups, white fish and cooked leafy greens. Simple pairings in which a drizzle of olive oil just before serving can become the detail you remember.

The same land, two stories

This is what we enjoy about looking at the two years together: the same varieties and the same way of farming, with different nuances of aroma and flavour. We are not looking for a winner. We want to recognise what each year gave us and take the time to taste it thoughtfully.

A taste of Terre di Giorgio

Our olive oil belongs to the same idea of hospitality as our wines, our cooking and a stay at the agriturismo. We hope a day here leaves you with that connection between the landscape you have seen and the flavours you have found at the table.
