Organic wines and pre-orders from Val d’Orcia
From the earth, using organic methods

In the hills of Val d’Orcia, at around 600 metres above sea level, our wine begins with the care we give each parcel: its soil, its exposure and the grapes we choose to grow. Sangiovese, a grape at the heart of Tuscan winemaking, is central to this work. You will find it in our single-vineyard wines and, for Diana 2026, in a selection from all our vineyards. Come and discover these places, then enjoy their flavours at the table. This is how we love to share Terre di Giorgio.

CALUS Grappa
Type: White grappa
Pomace origin: 100% Vigna Diana (single parcel)
Style: Dry — pure, precise and true to its origins
Philosophy: a pure expression of the vineyard, unshaped by oak.
Description
CALUS Grappa is made exclusively from the pomace of Vigna Diana. We chose not to age it in wood so that the aromas of the pomace and the character of this parcel take centre stage. Dry and crystal clear, it is a grappa to savour slowly after a meal.
Sensory profile
§ Color: transparent, crystalline
§ Nose: focused and lifted, with distinct pomace and light herbal notes
§ Palate: dry, linear and well defined, with a long, clean finish
Why “white”?
For us, making a white grappa is a choice of style: giving the raw material room to speak, without adding the notes of wood. It is another way to tell the story of Vigna Diana, beyond the wine itself.
Serving suggestions
§ Temperature: 10–14 °C
§ Glass: grappa tulip glass
§ Best enjoyed: neat, after a meal or for contemplative sipping.

CALUS Extra Virgin Olive Oil —
organically produced
We farm our olive groves using organic methods and produce CALUS extra virgin olive oil in limited quantities.
We have always served it to our overnight guests and in our restaurant as a reflection of our identity and commitment to the land.
CALUS is now available beyond the estate, bringing the character of Val d’Orcia to your table.
Origin and production method
CALUS is a cold-extracted extra virgin olive oil, with light fruitiness and elegant peppery notes.
It is made from a blend of heritage cultivars: Moraiolo, Frantoio, Leccino and Pendolino, all grown in Val d’Orcia.
The name pays tribute to the Etruscans, whose culture helped preserve and spread the tradition of “green gold”.
Sensory profile
Appearance: straw yellow with gold reflections.
Aroma: delicate and harmonious, with fresh, vegetal notes.
Palate: gentle, balanced pepperiness and a pleasant bite, with notes of olive leaf and artichoke stem followed by a lightly bitter finish.
Chef’s serving suggestions
Ideal with raw meat dishes, cooked or raw vegetables, pulses and fish.

Pure
saffron threads —
organically produced
For our CALUS saffron, we use meticulous, low-impact methods: the flowers are picked by hand, the stigmas are carefully separated and then dried under controlled conditions to preserve their aroma, colour and purity.
